Whole bunch pressed and fermented in oak, with a cool ferment to retain fruit and acidity.
Spent over three years ageing on yeast lees in bottle and hand riddled. Dosage: 3 g/L sugar.
“3 years on lees and 3g/L dosage. It smells of poached pear and ashed goat cheese with brioche and gougères. Grapefruit lift, too. Definitively rich, with frangipane tart, quince and crème fraîche. This is a beautifully made wine and the bead is exceptional. God-tier Whitlands sparkling. It seamlessly reprises green apple and white florals at full length and there’s a stony, river pebble nuance deep within, complementing the richness of the sum of its parts very well. “Georgia Dale has worked at both Chandon and at Deviation Road (among other places), so she’d know a thing or two about the making of sparkling wine. This release spent three years on lees and has very low dosage. It’s a beautiful drink but it’s also an interesting one. It’s biscuity, dry, hay-like and briney, its stonefruit and grapefruit flavours wrapped in cream and florals. There’s a genuine sea-like aspect to this, which helps propel it to a long finish, though it’s also creamy and complex.
