Cabernet Sauvignon from the Yarra Valley, grown on sandy loam soils and harvested on 2 April 2022 at 13.2 Baume. The fruit was 100% destemmed and aged for 12 months in seasoned French barriques.
Unfined and unfiltered, the wine was made with minimal intervention to allow the fruit and site to express themselves.
“Compact with fruit locked in, boysenberry and ripe black plum. The tannins have a kinetic sand feel to them, magnetic and attractive. A crab apple tartness refreshes and invigorates; some green peppercorn, a little tobacco. Bring this to the table on steak night and you’ll be in good stead.
